Every wine begins in the soil. Through Biodynamic farming, we nurture the life beneath our vines, enabling their roots to reach deep beneath the earth so that each parcel may declare itself fully. In the cellar, our touch is gentle and precise, guided by instinct rather than force. Each wine unfolds as an expression of the places that shaped it, alive with elegance, energy, and a sense of origin.

Native yeasts are the living connection between vineyard and cellar, preserving the identity of our terroir as the grapes become wine.

Craft in the Cellar

Our cellar work begins with a careful selection of fruit and the gentlest of extractions, preserving the purity and energy born in the vineyard. Native-yeast fermentations unfold spontaneously in wood or concrete vats, with some parcels distinctive enough to stand alone and others blended harmoniously. Élévage follows, with each wine finding its place in French or Austrian oak, terra-cotta amphorae, or concrete eggs. At every step, our role is not to impose, but to listen.

One Philosophy,

Three Terroirs

Technical Director Romain Gonzalez guides the vineyards and winemaking at Château Fonplégade and Château L’Enclos while collaborating closely with our team at ADAMVS in Napa Valley. United by a reverence for the land and a passion for fine winemaking, the three estates share Biodynamic practices, winemaking expertise, and even handfuls of soil exchanged between the vineyards. While each speaks with its own voice, all three are connected by a single vision.

Château Fonplégade

Born from Merlot and Cabernet Franc grown within a natural amphitheater on the limestone and clay slopes on the southwest side of Saint-Émilion, Château Fonplégade is farmed vine by vine, each parcel revealing its own nuance. Floral and graceful, the wine unfolds with vibrant dark fruit, freshness, and a delicate mineral thread. Stewarded by Denise Adams since 2004, Fonplégade captures the essence of the Côte Sud.

Château L’Enclos

Our Pomerol estate is anchored in iron-rich crasse de fer gravel soils. With nine hectares of vine, three terraces of history, and a character all its own, Château L’Enclos composes an aromatic symphony from Merlot and Cabernet Franc alongside Malbec, a historic variety of the appellation. Silken and velvety, the wine unfolds with depth, generosity, and elegance, marked by the distinctive signature of this storied Right Bank terroir.

ADAMVS

Perched high on Howell Mountain, ADAMVS is shaped by altitude, volcanic earth, and the untamed beauty of its surroundings. Here, Cabernet Sauvignon sinks its roots deep into the mountain soils, giving rise to wines of intensity and finesse, where strength, subtlety, and style are all woven together. Guided by Biodynamic farming and a deep respect for nature, ADAMVS captures the soul of Howell Mountain: wild, elevated, and deeply alive.

STEPHEN

Born from two estates, joined by one story: STEPHEN is a dialogue between Bordeaux and Napa, crafted by the hands and hearts of both teams. Created in tribute to Stephen Adams, STEPHEN brings together selected lots from Château Fonplégade and ADAMVS. Beyond the bottle, STEPHEN serves a purpose, as well, with proceeds supporting the Adams Neurosciences Center at Yale New Haven Hospital, a cause deeply meaningful to the Adams family.
